Key Lime Pie, Key West

Key Lime Pie FactoryOn a recent weekend trip to Key West, at the far most point of the Florida Keys, I had my first ever slice of key lime pie.  It was amazing! As  a huge cheesecake fan it all makes sense. I think I am addicted!

The pie is made with key limes, a special small variety which were grown in Florida Keys. They are much smaller than a normal lime. The biscuit base is made from Graham Crackers (like digestive biscuits) and the filling is made with egg yolks and condensed cream and of course lots of key lime juice. It’s baked in the oven but only for about 15 mins.
